So tonight I had one of those “vegetarian” dinners that was certainly nutritious but also hyper-caloric. I had a couple of eggplants, some onions, some sweet bell peppers, some carrots and some turnips (and some garlic, of course). So what did I do? I roasted the onions and eggplants with some garlic to make a fantastic baba ghannouj, I cut up the rest of the vegetables and ate them raw, then I ate the baba ghannouj spread on little Swedish crackers, and then I hauled some very stinky cheese out of the fridge and pretty much finished it with the remaining crackers.
Veggies! Cheese! Crackers! All of these sound like a light dinner, but I can assure you that I was stuffed to the gills by the end of the meal. Phew.
