Mind you, my mom's been doing that herself for a while. And, to be fair, it's not ALL butter and cream, ya know. This recipe only involves a bit of oil to brown the chicken, and then a bit of butter to coat the mushrooms and quince. I suppose you could cut out some fat by using chicken breasts, but i suspect they'll come out super-dry.
